I had a hankering for some quinoa today, so this is what I came up with. I know what you’re thinking. Of course there is hummus involved.
1/2 cup uncooked quinoa
1 stalk celery
1 cup of lettuce
3 sundried tomatoes (I used the ones in oil, but you can always soak the dried ones)
Sauce: 1 tbsp Red Pepper Hummus, 1/2 tbsp Almond Milk, 1 tsp dill, 2 tsp Garlic Powder, 1/2 tbsp sunflower seeds, (2 of the tomatoes, chopped)
Cook Quinoa. Layer with chopped lettuce, chopped celery. Top with sauce, and mix, then added remaining tomato, sliced, as a garnish.
