Why Raw? As most food these days is cooked and processed over 118 degrees, the enzymes most helpful to our digestive system and health are killed, not to mention all of the unpronounceable additives in once healthy items. Raw is the most natural clean way to eat, but let's face it: Food has transformed for a reason, and with cooked food comes an abundance of great culinary art as well. I'm mostly raw at home, but when I'm out, I won't turn down a great vegan dish.
